This was my dinner tonight. Can you guess the vegetables I added to this dish?
I was determined to have as many as would fit in the pot.
I started with spiraled beets courtesy of Whole Foods. I put them in the pot with a 1/4 cup of water on low heat. Then I added cauliflower rice, a shallot ( left over from bone broth), baby bok choy, onions and celery .Did you guess that yellow item on the right is one half of a baked sweet potato. You would be right. I sprinkled the dish with lemon juice and some apple cider vinegar. The cauliflower absorbed some of the liquid and lessened the sharpness of the vinegar. Of course, salt and pepper were added.
Why did I eat so many vegetables? I've been reading several books that recommend high amounts for your health. Dr. Michael Greiger recommends one serving of cruciferous vegetables, two servings of greens like arugula and swiss chard and two servings of other vegetables like purple potatoes, pumpkin, sea vegetables and squashes.
I'm trying to try different veggies too. Dr. Greiger's app makes it easy to trace your intake.

What does Dr. Oz say about veggies? His advice is to OD on veggies. They are high in vitamins and minerals. If you have a night when you don't have fresh vegetables in the house, try some frozen ones to speed up your prep time.
