A trip to the library last week sent me to my favorite section --the cookbook shelves.
I discovered a book called life in balance by donna hay. If you read cookbooks like they are wonderful novels, then you will enjoy the beauty of this book. The photographs of the vegetables are some of the best I have seen. The colors are vibrant and the foods are fresh with drops of moisture on them. The author's introduction of the book explains that it is not a diet book but about finding some balance in the way you eat.
Some of the topics are: a good clean start, eat your greens, super greens, power protein, good grains and more. To start off your day Donna gives us this recipe for a smoothie called "the smoothest of green smoothies"
The ingredients are: 1 banana, peeled, 1 cup baby spinach leaves, 1 stalk of Swiss chard of kale (trimmed), 2 T of flat leaf parsley leaves, 2T mint leaves, 2 cups coconut water and 1 cup of ice cubes. Whip it up in a blender until smooth. Divide between two glasses and serve. The recipe is delicious.
I was curious about the chapter called super greens. The author features watercress, broccoli, cabbage, silver beet( we know it as Swiss chard), kale, brussels sprouts and spinach. I am eating several of these green superstars, but, I must confess that I am not including watercress or brussels sprouts. How about you? Are you eating all of these greens? They are rich in vitamins and belong in your eating plan.
