What are you doing to cool off this weekend? Are you going to the beach or the pool?
My plan is to eat cool foods to help me cool off. Lately, I've been buying a lot of watermelon. Of course, it's delicious and refreshing by the slice. But I wanted something a little different.
I chopped up some watermelon, put it in the blender with a squeeze of lime juice and some mint leaves. Then I poured the mixture into some popsicle forms. Voila, after a few hours, I had popsicles. My six year old grandchild said, "These are awesome, Nana!"
You could also make Watermelon Soup the same way. Add some zucchini noodles to the top or shredded carrots for a decoration. The sky is the limit to what you can do!
