Peanut Noodles with Broccoli

Tried this recipe the other night when I wanted something quick. I found it in the cookbook called Forks Over Knives. There is a movie with the same name.

This recipe is spicy and sweet. So here goes.

Serves 2

8 oz. brown rice noodles ( I like the ones in Whole Foods)

4 cups broccoli florets ( from about 2 large heads)

1 cup coconut water

3 TBS. of peanut butter ( I prefer the taste of almond butter)

2TBS of 100% pure maple syrup

2 TBS of low-sodium soy sauce

1T fresh minced ginger

1/2 TSP if crushed red pepper flakes, or to taste

Bring 6 to 8 cups of water to boil over medium high heat. Once boiling, drop in the noodles and cook according to the package directions. You can taste periodically to see if they are soft enough, usually 4 to 5 minutes.

Add the broccoli florets to the cooking water and cook for an additional 1 minute. Drain the noodles and the florets and set aside.

In a large pot over low heat, combine the remaining ingredients. Stir continuously and cook until smooth, around 8 to 10 minutes.

Add the noodles and broccoli to the peanut sauce. Use tongs to mix well.

Enjoy! This recipe reminds me of Dan Dan noodles from an Asian restaurant.
