Dreena Burton is a cookbook author. One of her books is called PLANT-POWERED FAMILIES. She features over 100 KID-TESTED, WHOLE-FOODS, VEGAN RECIPES.
You don't have to be vegan to enjoy a tasty salad dressing like the one I made tonight.
Here are the ingredients which you place in a blender.
1/2 cup raw almonds
2 1/2 TBS. of apple cider vinegar
2 TSB. of pure maple syrup or agave nectar
2/3 cup of water (or more to thin as needed)
1 very small garlic clove
1 tsp. freshly grated ginger
1/2 tsp. Dijon mustard
1/2 tsp. sea salt
Freshly ground black pepper ( optional )
1/8 tsp. curry powder, or more to taste
Puree all the ingredients until very smooth.
Makes about one generous cup.
Enjoy this dressing over chopped kale, chopped apple, raisins, grated carrots or your salad of choice.
